“members are weighing in on the implications.” Same here — what’s worked for me is a simple batch card on each curing rack: salt %, target water activity, start date, and a QR linking to photos/notes so staff spot drift fast and customers can scan at the counter. Keep the card public-facing but leave spice ratios off the QR doc — anyone else using QR labels, or is a whiteboard enough for your crew?
