Dialing pars for the Friday rush

We’re pushing 100% in-stock from 4–7 pm Fridays with shrink under 2%, because I’d rather have guests choosing from a full case than waiting while we cut. I’m building pars off POS hourly pulls and a 1.25 yield on ribeye, but chicken breast and stew meat are volatile — what tweaks are you using to keep service fast and cases full without overcutting?

I build 30‑min micro‑pars for 4–7 off the last four Fridays and keep a 15% ‘hold‑back buffer’ of chicken/stew pre-cut in back, dropping only when the case dips under 50% so cutters stay on pace. If it’s spiky, go shallow on facings and use 2–3 lb speed packs to refill fast — pit crew, not spare tire. Are the chicken swings tied to ‘BOGO’ promos or rain days, or just the clock?

Same challenge with “chicken breast and stew meat are volatile” — we set a 6:15 flip: cap presentation depth to shallow pans and convert remaining breast to fajita strips and stew to chili grind/kebabs so the case stays full without new cuts. It’s staging the case like a theater set, then selling through the value‑add first — only caveat: we time-stamp those conversion batches so Monday doesn’t inherit Friday’s enthusiasm.

I run a ‘12‑minute cover’ off live POS for ‘4–7 pm’, then hard-stop fresh cuts at 6:35 and only top with half-pans. Anything lingering becomes 1‑lb grab‑and‑go (stew to chili mix, breast to fajita) so the case still looks full without committing depth.
