Quick question from QA: in your shops, is metal detection a CCP on bone-in primals, or do you reserve it for boneless and grind? We validate at 2.5 mm ferrous/3.0 mm non-ferrous on 10 lb beef chubs, but rib bones trigger constant false rejects, so I’m curious how you justify the step in your HACCP and where you set the critical limits.
We stopped treating bone‑in primals as a CCP and moved the CCP to post-debone metal detection; bone-in runs as a documented PRP, since ‘2.5 mm ferrous/3.0 mm non-ferrous on 10 lb beef chubs’ kept dumping ribs for product effect. If we must scan bone-in, we use X-ray and justify it in HACCP with a short validation and corrective action flow. Curious if you’re locked into CCP on all lines, @QA_Liz.
