The Art of Curing Meat

I’ve been diving deep into traditional curing methods lately, and it’s truly fascinating how much craftsmanship goes into each step. The balance of salt, the right choice of spices, and the aging process all come together to create those amazing flavors we love. It’s like a little piece of history on a plate! Has anyone tried making their own cured meats, or do you have favorite brands you recommend?

Curing meats has been such a rewarding experience for me! I’ve found that using a mix of kosher salt and pink curing salt really helps in achieving that perfect texture and flavor. Last time, I added some crushed black pepper and garlic to my batch, and it turned out amazing.
