I set Google Scholar alerts for ‘meat microbiology’ and ‘Listeria control,’ skim Meat Science’s TOC monthly, and trial one change in the shop (like a week of peracetic on trim) so it’s not just theory — otherwise it feels like drinking from a firehose. Curious if you follow the FSIS Notices email too; that’s been the most practical feed for me.
